You’d probably circle the first two.

But that third one? Pudd…what?

What you've come across on restaurant menus could look like this: Pad Prik King, Pad Prik With Ginger, Padprik.

If you ordered it, you'd get a spicy stir-fry, but far from what the original dish intended to be.

🔥 A Stir-Fry That Pulls No Punches

Puddprikking (ผัดพริกขิง) is a stir-fried dish built on fiery chili paste, crisped-up veggies like green beans or long beans, and a protein that soaks up every bit of flavor.

What makes it different?

  • No coconut milk. This dish doesn’t soften its punch.
  • Dry-fried. Not a saucy puddle in sight.
  • Serious wok heat. The paste fries until it clings.
  • Aroma bomb. The scent alone might make your eyes roll back.
