Recipes are tools, not destinations.
If you are shaking your head right now, let me unpack it. There’s one thing, really, that can stand solid, like a giant cast-iron wall between you and your ability to cook like a Thai, and you may not even be aware of it.
It’s the cultural difference between in-the-oven and on-the-open-fire cooking.
To simply put it, anyone who wants to create deliciously flavorful Thai dishes like a Thai will need to make a switch from the baker’s to the top-of-the-stove/open-air/open-fire cook’s mindset.
That’s when the magic happens: when you place true and delicious Thai food on the table for your family or friends.
Only when that takes place, you will start to understand - “get” - Thai cooking beyond “pad Thai,” “tom yam soup,” “pad kra pao,” and other dishes commonly found on restaurant menus in the U.S. And, yes, they are horribly misspelled and mispronounced.
"Thai enough?"
You may think it may take too long, or even think what’s offered on Thai restaurant menus - or any Thai recipes you can grab online - is Thai enough for you.
But with the right guidance and right approach, it won’t.
What if I told you that it probably will take the same amount of time as cooking by following recipes, or taking cooking classes?
